Mersel Red Velvet is made of slightly undervalued grape variety Cinsault, which was given a new lease of life by the Mersel Wines team. The philosophy of Mersel winery is to keep winemaking quite simple and stick to their centuries-long traditions. Mersel produces natural wines with little or no sulfites. The vineyards are farmed organically and the wines are usually unfined and unfiltered to preserve the terroire and grape expression.
This truly velvety wine is made of 100% Cinsault grapes that come from 30 years old vines, grown on the altitudes of between 2000 and 2400 meters. After carefully sorting and destemming the berries are moved to a stainless steel tank and sealed for 20 days in Carbon Dioxide environment. The fermentation starts inside the berries, hence the method name - carbonic maceration. Berries are then pressed and the rest of sugar is fermented in low temperatures. The wine results in bubble-gummy fruitiness, so unusual for red wines.
